A satisfyingly crunchy alternative to starchy french fries. To make these non-dairy, try substituting cashew or almond meal for the cheese and adding a bit of nutritional yeast for flavor.

Ingredients

  • 1/2 small jicama, peeled of fibrous skin
  • 1/4c grated parmesan cheese (To make these non-dairy, try substituting cashew or almond meal for the cheese and adding a bit of nutritional yeast for flavor.)
  • 1 tbsp evoo
  • Garlic powder, onion powder, seasoning salt to taste

Method

Step 1

Pre-heat oven to 375 F.

Step 2

Cut jicama into 1/4" thick lengthwise slices, then cut again into 1/4" sticks to resemble fries. Try to keep them sliced as evenly as possible for even baking.

Step 3

Toss sticks with evoo.

Step 4

Mix together cheese and spices in a ziploc baggie, toss in jicama, seal bag and give it several good shakes to evenly coat the fries.

Step 5

Place onto baking sheet lined with parchment paper, spaced apart so they are not touching each other.

Step 6

Bake for 15mins. Remove from oven, toss/flip fries, return to oven for another 10mins or until baked to a nice golden brown color.

Step 7

Consume immediately :)

I was very dissappointed..looked just like fries but the crunch was not appealing at all..I cooked them longer on a lower light but they never softened.
