Baked Jicama Fries2012-05-05

A satisfyingly crunchy alternative to starchy french fries. To make these non-dairy, try substituting cashew or almond meal for the cheese and adding a bit of nutritional yeast for flavor.
- 1/2 small jicama, peeled of fibrous skin
- 1/4c grated parmesan cheese (To make these non-dairy, try substituting cashew or almond meal for the cheese and adding a bit of nutritional yeast for flavor.)
- 1 tbsp evoo
- Garlic powder, onion powder, seasoning salt to taste
Pre-heat oven to 375 F.
Cut jicama into 1/4" thick lengthwise slices, then cut again into 1/4" sticks to resemble fries. Try to keep them sliced as evenly as possible for even baking.
Toss sticks with evoo.
Mix together cheese and spices in a ziploc baggie, toss in jicama, seal bag and give it several good shakes to evenly coat the fries.
Place onto baking sheet lined with parchment paper, spaced apart so they are not touching each other.
Bake for 15mins. Remove from oven, toss/flip fries, return to oven for another 10mins or until baked to a nice golden brown color.
Consume immediately :)
