Baked Stuffed Chorizo, Tomatoes and Onion Peppers

Heat fat of your choice on a saucepan.

Stir fry garlic and onions until slightly brown.

Add chorizos and cook for a few minutes until each side turns slightly brown.

Add cherry tomatoes, cayenne pepper, paprika powder and tabasco sauce.

Cook for a few minutes until caramalized.

Slice the cap of the peppers and insert chorizo mixture into the peppers.

Crack open the eggs onto the mixture.

Bake at 180 deg C for 20-25 minutes or until egg is half cooked.

Season with cracked pepper. Bon Appetit!


  • two whole peppers
  • two pork chorizos (from the market), sliced into small pieces
  • half onion, diced
  • 1 clove garlic
  • 2 eggs
  • 8 cherry tomatoes, sliced into halves
  • 1 tsp cayenne pepper
  • 1 tsp paprika powder
  • 1 tsp tabasco sauce (if you like it spicy)
  • 1 tsp fat of your choice
