Banana Choc Chip Muffins

1. Pre heat oven to 180 degrees celcius fan forced.
2. Mix together the wet ingredients first and then add the dry ingredients.
3. Place patty pans in muffin tins and fill each patty pan with muffin mix.
4. Cook muffins for 15minutes and serve warm!

Ingredients

  • 2 cups almond meal
  • 5 ripe bananas (mashed)
  • 5 eggs (whisked)
  • 2 heaped tsp honey
  • 1 cup dark choc chips
  • 1 tsp vanilla essence
  • 1 tsp baking powder
  • 1 tsp baking soda

The countdown is on. I have a year and a half to lose 20kg. I have tried to do this many times before, but there has been no deadline like this one. I'm getting married on Saturday 3rd November 2012 to my wonderful fiancee.

    I made these for a pool party and they were a HUGE hit!! I’m glad I have about 8 left overs as I just LOVE these!! There’s SO much banana flavor and the dark choc chips were gooey good! Thank you for sharing this recipe… it’s gonna be one of my favorites from now on!

    Wish I came across this yesterday. I had some frozen bananas that I wanted to bake into banana bread ( which I haven’t made since turning paleo) And just took my old recipe and converted the best I could to paleo friendly . this is what I made

    1/4 Flaxseed
    1/4 flaxseed meal
    3/4 almond meal/flour
    1/4 coconut flour
    1/2 teaspoon sea salt
    1 1/2 tsp baking powder ( I could not find a subsitude)
    WHISK TOGETHER
    1/2 cup ORGANIC AGAVE NECTAR
    3/4 STICK ( 6 TABLESPOONS) soften Butter
    BEAT TOGETHER IN LARGE BOWL MED SPEED UNTIL CREAMY
    ADD
    2 EGGS
    1 1/4 CUP BANANAS
    SLOWLY ADD THE DRY MIX INTO MIXER
    CHOP VERY FINE WALNUTS AND ALMONDS
    1 CUP WALNUTS
    1/4 ALMONDS
    SLOWLY ADD TO MIX
    I ADDED GHIRARDELLI 86% CACAO FOR CHOCOLATE CHUNCKS FOR THE BOYS.

    I noticed you used more eggs and no butter. what can i use instead of butter ???

    so yummy!! had to cook a little longer and make sure you cook at 350o!!! lots of banana flavor. my sister tried them and has never had anything paleo and she loved them!!! a must serve warm! so gooey and you feel guilt free afterwards

    Made these tonight and they are yummy. Next time will probably add some shredded coconut and cook a bit longer. They were very gooey inside and overall very moist.
