1. Preheat oven to 325 degrees.
2. Beat your egg in a small bowl. I just used a fork.
3. In a large bowl mix together all the other ingredients, except your chocolate.
4. Add the beaten egg to the large bowl and mix until well combined then fold in your chocolate.
5. Drop tablespoonfulls of the cookie dough onto a parchment lined baking sheet. I got 12 cookies out of one batch.
6. Bake for about 14 minutes.

My name is Marlene. I'm a proud Military Wife and Mommy to two gorgeous and charismatic little girls. I'm also a photographer and feel blessed to be able to stay home with my girls while continuing to pursue my passion for photography. I was a vegetarian for 10+ years (hence... You hunt. I gather.) and I recently decided to re-enter the meat eating world. We tried the Paleo "diet" almost 2 years ago and I was not successful, for many reasons. My husband, however, did really well. I've since learned that this isn't a diet. This is a lifestyle. Being vegetarian was probably the hardest obstacle during my first attempt. Eventually I slowly started incorporating seafood and some poultry into my nutrition plan and now here we are. Turns out, I <3 bacon! My husband is a CrossFitter and I joined his box at the beginning of this year. I've never been athletic and I have to admit that I'm kind of surprised at how much I am loving CrossFit! I wish I had started much sooner. I feel great and I look forward to our WOD's which is something I never thought I'd say.
