Banana Coconut Cinnamon Pancakes

1. Place eggs, egg whites, coconut flour, 1 TBSP of the ground cinnamon, and 1/3 of the banana into a blender and whip
2. Heat coconut oil in skillet over medium-high heat (You can either use a large skillet and make multiple small pancakes, which will be easier to flip, or you can use a medium sized skillet and make one large pancake)
3. Add mixture to hot pan, cover, and allow to cook until bubbling on top. Once bubbles form, it is ready to flip
4. Flip pancake and cook other side for a couple of minutes
5. Put pancake/s on plate, with rest of sliced banana, 1 TBSP of ground cinnamon, and 1-2 TBSP of the coconut milk
6. Place pancake in microwave to allow coconut milk to soak into pancake and bananas to soften
7. Remove from microwave and pour the rest of the coconut milk on top

  • 2 TBSP coconut flour
  • 1 TBSP coconut oil
  • 3 TBSP coconut milk, separated
  • 2 TBSP cinnamon, separated
