Beef Stew

Ingredients

  • 3 pounds stew beef
  • 1 lg sweet potato...chopped 1/4 inch chunks
  • 3 tbsp olive oil
  • 3 cups water
  • 2 garlic cloves...minced
  • 3 bay leaves
  • 1 large onion...sliced
  • 1 tsp salt
  • 1 tsp pepper
  • 1 1/2 tsp paprika
  • 1 tsp allspice
  • 6 carrots...sliced
  • 3 ribs celery...chopped

Method

Step 1

Heat oil in large stock pot...brown meat. Add water, sweet potatoes, garlic, bay leaves, onion, salt, pepper, paprika and allspice. Cover and simmer 1 1/2 hours.

Step 2

Remove bay leaves...add carrots and celery. Sweet potatoes will be broken down...they are used for flavor and to thicken gravy. Cover and simmer another 45 minutes. Enjoy!
