Combine almond flour, sunflower seed butter, honey, and vanilla.
Roll mixture into small balls and place on wax paper on a cookie sheet.
Place in freezer to harden for about an hour.
Melt coconut oil and chocolate chips in a small saucepan over LOW heat, continuously stirring, being careful not to burn (this is easy to do so make sure heat starts on LOW and you keep stirring!)
Using a toothpick, dip balls 3/4 way into chocolate, leaving a small amount uncovered at the top.
Place balls back into fridge/freezer to harden chocolate.
Once hardened, cover up holes from toothpick by carefully rubbing over them with your finger.

- 1 cup Enjoy Life chocolate chips
