Cauli-Mac Salad

Ingredients
  • 1 Cauliflower Head...chopped into macaroni size pieces
  • 6 Hard Boiled Eggs...chopped (with or without yolks)
  • 1/2 cup Red Bell Pepper...diced
  • 1/2 cup Cucumber...diced
  • 1/4 cup Green Bell Pepper...diced
  • 1/4 cup Onion...diced
  • 1/2 cup Mayonnaise
  • 1/2 tbs Celery Salt
Directions
  • Steam cauliflower just until fork tender...place into a strainer and run through cold water to cool and stop the cooking process. Set aside to dry.
  • Mix your mayonnaise and celery salt.
  • Add cauliflower, veggies and mayonnaise in large bowl, mix well and refrigerate. Serve chilled.
