Wash cauliflower and remove stems. Rice the florets by pulsing them in a blender or food processor (just be sure not to puree them) or grating them with a cheese grater. Steam them until soft (don\’t add any water).
While steaming, preheat oven to 450 and grease a large cookie sheet or two small ones. In large bowl, combine cauliflower with remaining ingredients. Spread mixture onto prepared cookie sheets and brush with olive oil.
Bake for about 20 minutes, or until evenly browned. Remove from oven and let cool before topping. Turn oven broiler on and broil topped pizza for about 3 minutes, or until cheese is bubbly.
- 4 c. steamed, riced cauliflower (about 1 1/2 heads)
- 4 c. shredded mozzarella cheese
- 4 eggs
- 1 T. Italian seasoning
- toppings [tomato sauce, more cheese, pepperoni, etc.]
