Cauliflower sushi

This is for sushi lovers who no longer eat rice. This is a great substitution and it’s all about the fish and seaweed anyway, isn’t it?

Ingredients

  • Cauliflower
  • Sushi nori
  • Avocado sliced thin
  • cucumber sliced thin
  • pickled ginger and wasabi
  • sushi grade salmon or tuna

Method

Step 1

Pulse half a head of cauliflower in a food processor. Take the rice-like cauliflower and put in a pan with a little bit of water and heat to steam it. When water evaporates the cauliflower is done. Lay out a sheet of sushi nori and spread cauliflower in a thin layer. Then put a small piece of fish, avocado and cucumber in the center and roll the nori up like a tiny rug with your fingers or using a bamboo sushi mat. Enjoy with pickled ginger and wasabi and some coconut aminos.
