Chicken n\’ Collards

I use an electric pressure cooker to make this. 1/4 the shallots and cut the bacon into 1\” pieces. Set the pressure cooker to saute and cook the shallots, bacon and crushed red peppers until the shallots start getting soft and the bacon is getting cooked looking. Add the chicken and brown up the outsides a little. While this is cooking clean and de-stem the collards. Layer them in a pile, roll them up and cut into 1\” pieces. Add the water, apple cider vinegar, palm sugar and collards. Stir everything up real good and put the lid on. Cook under high pressure for 5 minutes. Release the pressure and let sit for 5 minutes…or not.


  • 4 boneless chicken thighs
  • 1 bunch collards
  • 4 shallots
  • 4 slices applewood bacon
  • 1/8 tsp crushed red pepper
  • 1 tbs apple cider vingegar
  • 1 tsp palm sugar
  • 1/4 cup water
