Pre-heat the oven at 375. Using a meat tenderizer, flatten the chicken until it’s about an inch thick. Season both sides with any type of seasoning you wish. We used Nom Nom Paleo’s Magic Mushroom Powder but you could do something like Italian seasoning with salt and pepper. Heat up the oil in a skillet until it’s really hot. Sear both sides of the chicken, about 2-3 mins per side. Remove the chicken from the heat and cover with pepperoni, sauce, and cheese. Bake for 10-15 minutes or until the chicken is cooked through. Serve with a big pile of spaghetti squash and enjoy!

  • 2 Boneless Skinless Chicken Breasts
  • Pepperoni
  • Marinara Sauce
  • Parmesan Cheese (We used raw/organic)
  • Chicken Seasoning of your Choice
  • 2 Tbsp Coconut Oil

    Agreed. This was easy and awesome. I butterflied my chicken, beat the crap out of it with a mallet, rubbed Mrs. Dash Italian blend on it, added the toppings, and my urge to go tear down at Olive Garden was satisfied. I would definitely make this for company. I used Walnut Acres organic marinara and herbs. It is deee-lish!
