Chocolate Almond Coconut Cookies

  • 2 1/2 Cups Almond meal flour
  • 2 Eggs
  • 1/2 Cup Unsweetend cocoa powder
  • 1/2 Cup Shredded coconut
  • 1/2 Cup Raw honey
  • 1/2 Cup Maple syrup
  • 1/2 tsp Baking soda
  • 1/2 tsp Sea Salt
  • Coconut Oil spray, optional


Step 1

Preheat oven to 325 degrees. Line a cookie sheet with parchment paper or spray with coconut oil and set aside.

Step 2

In a medium bowl, combine all ingredients. Stir until all ingredients are well blended.

Step 3

Using a teaspoon, spoon mixture in to the cookie sheet. Place about a spoon or two apart from each other.

Step 4

Bake for 15-18 minutes. Place on cooling rack.

    this were so easy to make and so delicious!
    i left the shredded coconut out and the maple syrup and added chocolate chips and it was a win – win situation!
    the second batch I made i top it off with a touch of caramel and sprinkle some sea salt.

    These were delicious! Next time I will add finely chopped walnuts. The only negative is that the dough was extremely sticky making it very difficult to handle. Certainly worth it though!
