Cool Cucumber Salad

Wash and skin the cucumber. Cut it in half lengthwise, then into half inch slices. Place in a mixing bowl.

Cut the cherry tomatoes in half and add to the cucumbers with the basil.

Toss ingredients with the olive oil, and salt and pepper to taste.

Serve well chilled.

Ingredients

  • 1 Large Cucumber
  • 1 cup Cherry Tomatoes
  • 1/3 cup Loosely Packed Chopped Fresh Basill
  • 3 Tablespoons Extra Virgin Olive Oil
  • Salt and Pepper
