Cracklin Crouton Grilled Chicken Salad

Cook your chicken breast on a Foreman grill or in pan with a little coconut or olive oil.

In a medium-sized bowl, layer lettuce, onion, and cucumber. Drizzle with lemon juice and sour cream and season with black pepper. Top with grilled chicken and pork cracklins.


  • 1 6oz grilled chicken breast (sliced)
  • 1-2oz pork cracklins (fried out pig skin)
  • 2-3 cups green leaf lettuce (chopped)
  • 1/4 small white onion (sliced thin)
  • 1/4 cup cucumber (diced)
  • 2-3 tbsp cultured organic sour cream
  • 2 tbsp lemon juice
  • Fresh ground black pepper
