Creamy Chicken Verde Bake

1.Preheat oven to 400 degrees F 2.Place the chicken in a large glass baking pan. 3.Mix the salsa, coconut milk, salt and fresh ground pepper in a mixing bowl. 4.Pour over the chicken. 5.Bake for 30 minutes, and add the arrowroot/water mixture to the verde sauce, stirring everything to incorporate evenly. 6.Bake 10 minutes longer or until the sauce has thickened, and the chicken is cooked through. Sprinkle with chopped cilantro just before serving.


  • 2 lbs boneless chicken parts
  • 2 cups green verde salsa
  • 1 can unsweetened full fat coconut milk
  • 1 tsp salt, 1/4 tsp black pepper
  • 1 TBS arrowroot, dissolved in 2 TBS cold water
  • chopped fresh cilantro for garnish

    Didn’t have some ingredients so:

    1can coconut milk
    1can tomato sauce
    1small can Hatch brand mild green chili
    1 can reduced sodium black beans
    Lime juice to taste
    Ground coriander (which is cilantro) to taste
    1-2 pounds cooked chicken

    I threw all of it in a skillet on stovetop, brought it to a boil, then turned it all the way down and simmered ’til chicken fell apart into strings. VERY GOOD

    This needed more arrowroot before thickening up – I had to add a second helping of the arrowroot/water mixture once it was done baking. My husband and I both felt this dish was a little bland, despite using delicious homemade chile verde sauce. Not necessarily a bad meal but would definitely not make it again.

    I thought it was excellent. Served over riced cauliflower. Would maybe add some veges next time like peppers or onions since there was so much flavorful sauce left over.

    My whole family, which includes four 7 year olds absolutely loved this dish! Making it again tomorrow night. I highly recommend trying this one out. I’m super picky! It was delicious!!

    One more thing I seasoned the chicken with salt pepper paprika and cumin in the glass baking dish and added a good amount of cilantro to the sauce. I still garnished with cilantro. Sooo yummy!!
