CROCK POT SAUSAGE, SWEET POTATO, AND VEGGIES

Peel and chop your sweet potato into chunks. Slice our onion so you have strips (not all chopped/diced up). Place onion and sweet potato chunks in a bowl, add your spices and mix it up.

Layer some of the sweet potato on the bottom of the crock pot. Place your sausages in. Add the rest of your onion and sweet potato. Pour in the chicken broth.

Set your crockpot to low for 4 hours. When you have about 2 hours left, add in your collard greens. Sprinkle on some more salt and pepper and mix in the greens with the other veggies just a little. Continue cooking for the remaining time or until sweet potatoes are soft and done and your sausage is cooked through. (If it seems like everything else is cooked but your sausage is still pink, try and fish them out and cut them up into chunks- they’ll cook faster).

      I make a version of this by roasting the sweet potatoes and mashing them, and then stirring in cooked SPICY italian sausage and greens. So good!! Sometimes I eat it straight, sometimes I add and egg and make into patties, sometimes I stuff it into peppers and broil it.

      Crock Pot Sausage, Sweet Potato, and Veggies Plus A Rant on Insurance

      Well, for those of you with Lyme you know how annoying insurance can be. They won’t cover this blah blah blah. I honestly don’t know too much about the health care system in the US and I wish i knew more, it is just so dang confusing! Anyway, We recently got new insurance. My old insurance was FANTASTIC, they covered a lot and payed for all my meds (besides a 10 or 20 dollar copay…. no big deal). Well I went to refill 3 of my 6 prescriptions today. THAT WAS EXPENSIVE! Our new insurance SUCKS. They barely cover my meds. One of the medications I’m on is extremely expensive and I’m scared for when I need to refill that (in about a week)… they probably won’t cover much of it and I know I certainly don’t get paid enough at work to afford it. My parents help me out so much already and pay for the rest of my treatment, but I don’t want them to have to pay anymore! It’s not fair. It’s not my fault I got sick.
      Okay, on to the recipe. You get one picture because my camera lens is still broken and I could barely manage to get a descent pic with the reverse camera on my iphone. I really need to take it in… ANYWHO:

      Sooo appetizing looking, I know. Contain yourselves.
      Crock Pot Sausage, Sweet Potato, and Veggies:
      Ingredients:
      4 sausages (whatever flavor you like, I love the spicy italian! Make sure you get good quality sausages here, the flavor just isn’t the same with pre-cooked or knock off brands or anything like that)
      2 large sweet potatoes
      2 yellow onions
      3/4 bag of collard greens (I buy pre-cut/pre-washed greens that come in a bag like spinach. If you don’t have access to that it is probably about 5 cups? I’ll try and find out for you guys )
      1/2 cup of chicken broth
      1 tbs. salt
      pepper to taste
      1 tbs. paprika
      1.5 tsp. chili powder
      1 tsp. cumin
