Peel and chop your sweet potato into chunks. Slice our onion so you have strips (not all chopped/diced up). Place onion and sweet potato chunks in a bowl, add your spices and mix it up.
Layer some of the sweet potato on the bottom of the crock pot. Place your sausages in. Add the rest of your onion and sweet potato. Pour in the chicken broth.
Set your crockpot to low for 4 hours. When you have about 2 hours left, add in your collard greens. Sprinkle on some more salt and pepper and mix in the greens with the other veggies just a little. Continue cooking for the remaining time or until sweet potatoes are soft and done and your sausage is cooked through. (If it seems like everything else is cooked but your sausage is still pink, try and fish them out and cut them up into chunks- they’ll cook faster).
