Dad’s Famous Brisket

Ingredients

  • 1/2 cup BBQ sauce (I used this recipe: http://www.paleocupboard.com/bbq-sauce.html)
  • 1/2 cup ketchup (I used this recipe: http://paleomg.com/ketchup-rosemary-sweet-potato-fries/)
  • 1/4 cup apple cider vinegar
  • 1 tablespoon Worcestershire sauce (I used this recipe: http://paleotable.com/2012/11/paleo-worcestershire-sauce/)
  • 1/4 teaspoon pepper
  • 1 medium onion (sliced)
  • 2 bay leaves
  • 3 lbs brisket

Method

Step 1

If making homemade BBQ sauce, ketchup and Worcestershire sauce, make the day ahead. Otherwise look for Paleo-friendly versions if possible.

Step 2

Pre-heat oven to 325 degrees F. Combine all sauce ingredients and mix well. Place brisket in a shallow baking dish and coat in the sauce. Lightly cover in foil and bake for 3 hours.

Step 3

Let brisket cool completely (can even put in the fridge) and slice thinly against the grain. Cover and put in the fridge until ready to eat.

Step 4

Once ready to serve, place covered brisket and sauce back into the oven for 30-40 minutes until heated through. Serve with extra BBQ sauce if desired. Eat up!
