Easy Tumeric Chicken

-Lightly coat a cast iron skillet with olive oil and bring heat to medium high
-Add one large chopped onion and sautee for 5 min
-Add chicken and cook for additional 10 min
-Add tumeric, diced garlic, and squeeze half of one lemon
-Stir occasionally and cook for another 15min according to desired browning of chicken (be sure that the chicken is making contact with the bottom of skillet for proper browning)
-Remove the skillet from stove add cherry tomatoes and remaining lemon
-Place skillet inside an oven that is set on high broil
-Watch (and listen) for the cherry tomatoes to pop
-Before the 2nd to last tomato has popped, remove from oven and garnish with chopped green onion or parsley
-Add salt and pepper and ENJOY, then tell your friends you are an awesome cook

  • handful of cherry tomatoes tossed in olive oil and salt
  • handful of chopped green onion or parsley
  • 2 tablespoons olive oil
