French \”toast\”

Fry sweet potatoes until soft in coconut oil
While potatoes are frying, mix eggs, cinnamon & vanilla
Dip potato slices in egg mixture & cook in pan just like French Toast
Pour remaining egg mixture over potatoes & let it cook
You can top with maple or honey but it really is sweet enough with the potatoes & I\’m doing whole 30 which means no sweeteners of any kind- but I got sick of eggs every morning!


  • Sweet potato- thinly sliced
  • 3 eggs
  • Cinnamon
  • 1tsp vanilla
  • Coconut oil
