Glowing Skin Chocolate Almond Butter Squares

These things make for a great after-dinner snack and help satisfy my sweet tooth without putting a lot of sugar into my diet.  Perfect for folks needing a little bit of sweet but wanting to avoid the sugar spikes that can lead to skin breakouts and nasty acne.

Ingredients
  • 4"x4" or similar tupperware container to put in fridge
  • 1/4 cup coconut oil
  • 1/4 coconut butter or Kerrygold butter
  • 2-3 TBSP maple syrup or raw honey
  • 1/2 tsp sea salt
  • 1 tsp vanilla extract or 1/2 tsp vanilla powder
  • 1/2 cup raw cacao powder (or unsweetened chocolate powder)`
  • 4 TBSP almond butter
  • (optional) 1 tsp ginger powder
  • (optional) 2-3 TBSP Total EFA oil (for omega-3 content)
Directions
  • Melt the coconut oil and coconut butter / Kerrygold butter until liquid. Then add to a mixing bowl
  • Add 2 TBSP of maple syrup/honey plus all remaining ingredients to the bowl except for the cacao/chocolate powder and Almond butter. Mix into the oil to get as consistent as possible.
  • Add the cacao/chocolate powder gradually while stirring to keep an even consistency
  • Taste the mixture. If more sweetness needed add more maple syrup/honey or stevia to achieve your desired level of sweetness
  • Add optional ingredients if desired - gradually to evaluate taste
  • Pour half of the mixture into the tupperware or rectangular container
  • Place in freezer for 5 minutes or fridge for 20 minutes until hard
  • Remove from cold and gently spread almond butter on the surface to make a small layer (like a Reese's peanut butter cup).

  • Pour the remaining mixture on top and set back into fridge/freezer
  • Once the top is solid, cut out small squares with a butter knife and enjoy!
