Gluten-free Banana Pancake

Mash the bananas with a fork. Whip eggs with a handheld mixer. Mix bananas, eggs, almond flour, cinnamon and 2 tsp coconut oil.
Warm a pancake frying pan (preferably non stick) with 1 tbsp coconut oil. Add dollops of the pancake batter and fry on medium-low heat. (In case you use a large pan, you can add 3 dollops at a time). Fry them until golden brown.


  • 4 ripe bananas
  • 4 eggs
  • 3/4 cup almond flour
  • 1 tsp cinnamon
  • 4 tbsp cup coconut oil
