lemongrass, garlic chilli and ginger chicken stir fry

Add oil and heat in pan, add chicken and cook for 1 min, add ginger,garlic, lemongrass, chilli and kaffir leaves and cook for 2 mins.

Add zucchini and fish sauce and cook a further minute, add the rest of the ingredients and cook for no more than 5 mins or how \”raw\” you like your veggies ( I like mine on the raw side)

Steam bok choy and lay on the plate serve stir fry on top and add the optional garnish



  • 400grams thinly sliced chicken thighs
  • 2 x cloves of garlic, crushed
  • 2tbs fish sauce ( I use poonsin brand as it has nothing added)
  • Half a red capsicum, (bell pepper) sliced finely
  • Bok choy to serve
  • Toasted sesame seeds, hemp seeds and crushed cashews for garnish (optional)
  • sliced(spring onions (scallions) for garnish
  • 2 tbs macadamia nut oil for pan
