Lemony Garlic-Rosemary Chicken Thighs

1. Preheat oven to 400 degrees.
2. Combine your minced garlic and chopped rosemary.
3. Rinse chicken under cold water and pat dry. Place them in a baking pan. I used a glass one.
4. Gently peel skin away from chicken, without taking it completely off.
5. Using your fingers, put 1/4 of the garlic/rosemary mixture between the skin and place a lemon round on top of the \”mixture\” still between the skin.
6. Sprinkle the top of the skin with salt and pepper.
7. Bake for 45-50 minutes and/or until juices run clear.


  • 4 Bone-in, Skin-on Chicken Thighs
  • 4 Cloves of Garlic, minced
  • 1 Sprig of Fresh Rosemary, finely chopped
  • 4 Round Slices of Lemon, not too thick
  • Salt & Pepper, to taste

I gather.) and I recently decided to re-enter the meat eating world. We tried the Paleo "diet" almost 2 years ago and I was not successful, for many reasons. My husband, however, did really well. I've since learned that this isn't a diet. This is a lifestyle. Being vegetarian was probably the hardest obstacle during my first attempt. Eventually I slowly started incorporating seafood and some poultry into my nutrition plan and now here we are. Turns out, I <3 bacon! My husband is a CrossFitter and I joined his box at the beginning of this year. I've never been athletic and I have to admit that I'm kind of surprised at how much I am loving CrossFit! I wish I had started much sooner. I feel great and I look forward to our WOD's which is something I never thought I'd say.
