paleo banana chocolate chip cake

Pre-heat oven to 350. Mash the banana in the bottom of a large mixing bowl. Using a hand chopper or food processor, finely chop the apple, and add to the bowl. Add all other ingredients and mix by hand. The batter should be consistency of a cake batter. Grease a cake pan with coconut oil. Bake for 15-17 minutes or until the sides become slightly brown. Insert a toothpick into the middle and if it comes out clean you’ll know it’s done. Enjoy with homemade paleo ice cream or for breakfast.


  • 2 1/4 cups almond meal/flour
  • 4 eggs
  • 1 organic apple finely chopped
  • 1 overly ripe banana
  • 1/4 cup coconut oil
  • 1/3 cup water
  • 1/2 tsp baking soda
  • 1 tbsp cinnamon
  • ¼ cup dark chocolate chips (70% cocoa)

    Have you tried this recipe in as muffins? In the picture it looks like it stuck to the pan so I was just wondering if it might work out better in muffin papers? Just a thought…but didnt want to try it if someone had already with bad results. Thanks!
