Adapted from the Paleo Sandwich Bread recipe from

Mix the dry ingredients together, add the egg & a splash of oil to create a wetish batter.
Pour into a greased 4.5inch ramekin.
Microwave on full power for 1minute 20 seconds.
Turn out & slice – serve warm or allow to cool & then toast



  • 1tbsp Almond Flour
  • 1tbsp linseed with milled berries
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp coconut sugar (or honey/maple)
  • 1 beaten egg
  • flavourless oil

    I love this recipe. I modify it based on what kind of “muffin” I am in the mood for. I have added lemon juice and berries, raisins and cinnamon, cocoa powder and cherries, etc. :)

    I doubled the almond flour and left out the linseed, still came out great!

    Mine came out tasting rancid and rubbery. I’m currently trying to cook it in the oven to see if maybe it was just the microwave cooking that made it weird.
