Paleo Chewy Chocolate Chip Cookies

  • 1 cup almond flour
  • 1 tbsp coconut flour
  • 1 egg
  • 4 tbsp + 1 tsp coconut oil (or grass-fed butter)
  • 3 tbsp raw organic honey
  • 1 tsp organic vanilla extract
  • 1/8 tsp Himalayan sea salt
  • 1/4 tsp baking soda
  • ¼ cup or more chocolate chips (Enjoy Life’s or your favorite dark chocolate chunks)


Step 1

Preheat oven to 350

Step 2

In a medium-sized mixing bowl combine almond flour, coconut flour, baking soda, and salt

Step 3

In a small mixing bowl combine egg, honey, oil, and vanilla

Step 4

Combine bowls and mix well

Step 5

Drop tablespoons of dough on a lined baking sheet (I cover mine with parchment paper)

Step 6

Bake for 8-10 minutes (I take them out a tad undercooked)

Step 7

Let cool and serve (perhaps with a glass of almond milk)!

    Used bacon fat for the oil but had to double the coconut flour. Good!

    I deducted a tbs of almond flour and replaced it with organic cocoa powder. Delicious.

    These are the most delicious chocolate chips we’ve ever had! I got distracted by family while making them, so inadvertently left out the coconut oil, which I didn’t realize until they were baking. No matter, they were fluffy and soft and scrumptious. My husband can’t stop raving about them. I’ll make these again and again, and will probably still leave out the coconut oil !
