Paleo Chicken Fajitas

1. Combine the chicken, bell peppers, onions, spices garlic and lemon juice in a bowl and mix well;
2. If preparing ahead of time, let marinate in the refrigerator for about 4 hours.
3. When ready to cook, heat a large skillet on medium heat and cook the whole preperation with the cooking fat until the chicken is cooked through and the onion and bell pepper are soft.
4. Put the hot chicken preperation in a large bowl and let the people prepare their own fajitas on top of lettuce leaves with their favorite toppings.


  • 3 Lbs chicken breast, cut in thin strips
  • 3 bell peppers
  • 3 onions sliced
  • 2 tbsp oregano, chili powder, cumin and coriander
  • 6 chopped garlic cloves
  • Juice of 5 lemons
  • 4 tbsp cooking fat (coconut oil, tallow or ghee are excellent)
  • Butter Lettuce to serve
  • Your choice of toppings: diced tomatoes, fermented pickles, sauerkraut, sliced avocados, salsa, guacamole, mayonnaise and/or salsa verde

    The flavor was good; the spices smelled a lot stronger then they tasted. I do not like lettuce, but the butter lettuce did give a nice crunch with the chicken fajitas. Also roasted some broccoli with a little olive oil and sea salt for some added veggies. I split the recipe in half and made half the mixture fresh and stored the other half in the fridge to marinate overnight. The half I made equalled about two servings.

    You just gave me a great idea! I have some thin beef cutlets that I didn’t know what to make – they will be perfect for beef fajitas! :)

    Made these tonight and it turned out great. I cut the recipe by 1/3 and substituted one lime for a lemon. I had to drain some of the liquid since I like the fajitas to brown a bit. Made some Paleo tortillas, topped with avocado and tomatoes. Delicious! Even my kids devoured it!

    Is it 2tbsp of *each* spice, or 2tbsp total? 2 tbsp of each sounds a wee bit excessive.
