Paleo Pesto \’Pasta\’ with Mushrooms

  • 2 Tablespoons Olive Oil
  • 2 Large Zucchinis
  • 1 Cup Cut Mushrooms
  • Salt to taste
  • Pepper to taste
  • Pesto: 1/4 cup fresh Basil
  • 1 clove Garlic
  • 1/4 cup olive oil
  • Salt to taste


Step 1

Start by heating 2 Tablespoons of Olive Oil over Medium Heat Make your pesto by combining the basil, garlic, and olive oil (Or use any pesto recipe you like)

Step 2

Lightly peel the zucchini. You just want to get rid of the bright green skin. Continue to use the peeler to create your \'noodles\'.

Step 3

Stop when you get to the seedy center. Toss the \'noodles\' in the olive oil over medium heat until the are hot and tender. (About 2 minutes) Add in cut mushrooms and salt and pepper to taste Toss with your pesto and remove from heat

    Gotta love vegetable ‘noodles’! We use carrot all the time, but next to try is zucchini! I just can’t get over hating zucchini as a kid – but hey, everything is better as a noodle!
