Paleo Pumpkin Muffins

Preheat oven to 350 degrees. Mix all ingredients until smooth. Place paper muffin liners into a muffin pan. Pour into muffin pan about 3/4 of the way to the top. Bake for 18-20 minutes.


  • 1 1/2 cups almond flour
  • 3/4 cup canned pumpkin
  • 3 eggs, 1/2 tsp cinnamon
  • 1/2 tsp melted coconut oil
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • pinch of sea salt
  • 2 tsp warm almond butter
  • 1 1/2 tsp pumpkin pie spice, 1/4cup honey

    It also needs 1/4 cup of agave or honey. I forgot to list that ingredient. Sorry

    So…not sure what happened, but I had to add water to mine as there was no moisture my batch…..which I fear will make these terrible.

    The second time I made these I did half coconut flour and half almond flour instead of all almond. Big mistake. The coconut flour sucked up all the moisture. I even dumped a little applesauce in to try and manage the dryness. Obviously the two flours are not interchangeable using the same proportions. Anyone try this and have a better experience than me? It is a very good recipe!

    @Carol D., I saw a recipe like this one on another website, and they listed as an alternative using 1/2 cup coconut flour instead of the 1 1/2 cup almond flour. I haven’t tried it personally, so I can’t vouch for the results! Hth!

    I have made these in the past and loved them! I wanted to make them today but didn’t have the pumpkin. So I made apple/berry muffins instead. I used the same amount of applesauce instead of the pumpkin. Used 1tsp of cinnamon and nixed the pumpkin pie spice. then I added some frozen mixed berries. Some I topped with some paleo granola the rest I left plain. they were so good!

    Excellent recipe! Looked up a recipe for a paleo cinnamon frosting to go on top -
    1/4 cup grass fed butter
    1/2 tablespoon cinnamon,
    1/2 tablespoon vanilla
    1/2 tablespoon honey
    mix for 3 minutes until blended.

    My caveman rating: 5 out of 5 stones!

    I added 1/4 cup chopped pecans for a little crunch. Very tasty. I’ll probably try replacing the honey with maple syrup next time. I just love a pumpkin-maple flavor!
