Paleo Pumpkin Porridge

1. Heat coconut oil in a saucepan
2. Toast nuts
3. Add pumpkin, shredded coconut, milk/cream, cinnamon into the saucepan
4. Heat
5. Beat in eggs
6. Heat through until it makes that porridgey ploppy noise.
7. Put in bowl
8. Spoon on extra coconut milk/cream and a sprinkling of pumpkin seeds
9. Eat

  • mashed pumpkin, 1/2 cup
  • eggs, 2
  • coconut milk/cream, 1/4 cup
  • shredded coconut, 1/4 cup
  • walnut, handful
  • cinnamon, 1 teaspoon
  • coconut oil, for frying
  • pumpkin seeds, sprinkle

    I would suggest adding honey to this. Otherwise it’s somewhat bland
