Pumpkin bars

Preheat oven to 350 degrees
For the crust: Process all of the crust ingredients in a food processor until ground up like sand.
Press into a baking dish. I used a 9X9 in the pic.
Bake for 15 minutes.

For the filling: Process the dates first in the food processor until they are finely chopped.
Add the rest of the filling ingredients and process until all mixed together
Pour filling on top of cooled crust and place in the fridge for at least 4 hours to cool and set….even better overnight.

  • Crust: 1 1/2 cup of walnuts
  • 1/2 tsp of baking soda
  • 1 T of coconut oil or grass fed butter
  • pinch of salt
  • Filling: 5 pitted dates
  • 1 cup of pumpkin puree
  • 1 tsp of pumpkin pie spice
  • 1 1/2 T of coconut oil
  • 1/4 cup of shredded unsweetened coconut
  • 1/4 cup of chopped pecans
