Pumpkin-Fig Cookies

1.Preheat oven to 350 degrees.
2.Combine all dry ingredients in a large mixing bowl.
3.With a hand-mixer, beat all wet ingredients in a smaller bowl.
4.Pour wet into dry and continue beating with hand-mixer until smooth and well blended.
5.Fold in dried figs.
6.Using a tablespoon, measure out batter onto a parchment-lined baking sheet.
7.With a fork press the cookies down (you\’ll get a nice cross-stitch look).
8.Bake for 10-15 minutes.

Ingredients

  • 2 c. almond meal, 1/8 c. coconut flour, 1 tsp. cinnamon, 1/2 tsp. ginger, 1/2 tsp. nutmeg, 1/4 tsp. cardamom, 1/4 tsp. cloves, 1/2 tsp. baking soda, 1/8 tsp. salt
  • 1/2 c. pumpkin puree, 1/4 c. coconut nectar, 1 egg, 1 tsp. vanilla
  • 5 dried figs, finely chopped
