Ingredients
  • potatoes
  • rosemary
  • thyme
  • sea salt
  • FOC (fat of choice)
Directions
  • Preheat oven to 350FWash and dry potatoes; cut potatoes in half and place in baking dishFinely mince rosemary and thyme until you have 2 tablespoons of each herb (4 tablespoons total); combine minced herbs in small bowlToss potatoes in FOC. Use as much or as little as you need to ensure that the potatoes are well coated.Sprinkle potatoes with herb mixture and coarse sea salt to taste.Bake potatoes for 20 minutes. use a knife to cut through a potato; the knife should easily pierce through the potato. If they are not ready, let them roast longer.{Optional} Once the potatoes are finished, turn oven to broil. Let potatoes broil for 3 minutes or as long as you see fit. Keep a close eye on these because they can easily burn. however, if you successfully broil the potatoes, you will have nice crispy edges!
