Salsa coconut chicken

Dice chicken and sauté in oil on medium-high heat. When it starts to brown and crisp, add salsa to deglaze. Remove from heat, stir in coconut milk, and serve.

Ingredients

  • 2 Boneless skinless chicken breasts
  • 2-4 T coconut oil
  • 2-4 T red salsa (salsa fresca picante papaya...)
  • 2-4 T coconut milk

    OMG.. made this tonight… used thigh meat and a fresh salsa… needed less oil because it was thigh meat, was so simple yet so good!! Hubby says I’m allowed to make it again 😉 ! Awesome!

    I made it and it was so good and simple. I think next time I’m gonna add black olives I feel like they will go well
