It\’s not pretty, but it sure is GOOD!
Heat cooking fat in large pan over medium heat and saute onions.
When onions are almost done, add garlic and mix for about 30 seconds.
Crumble sausage in pan and cook until browned.
When sausage is browned, turn heat to medium low.
Add coconut milk and pumpkin, as well as any seasonings you want. Stir.
Reduce heat to low and let simmer for 5-10 minutes.
Another option is to add chicken broth along with the coconut milk and pumpkin to thin it out into more of a sauce, say to put over spaghetti squash.
- 1 lb loose ground sausage
- 1 can coconut milk
- 1 can pumpkin puree
- 1 sweet onion, diced
- 4 cloves garlic, minced
- 1 tbsp cooking fat (butter, bacon grease, etc.)
