Seasoned Chicken and Veggies Baked

heat oven to 400-415F
Lightly coat cooking pan with extra virgin olive oil, or oil of choice.
Layer veggies. I started with eggplant but this is all up to you. You can use any veggies you like, these are just the ones I had handy.
Season each layer as desired, again seasoning is up to you as well.
Layer chicken last. I seasoned the chicken prior and let it marinate. Can squeeze some lemon or lime if desired on top.
bake for 45min, or as long as your oven requires since they tend to differ.

  • Veggies: eggplant, zuchinni, yellow and green peppers, green beans, home grown tomato and baby tamato, all seasoned with lemon pepper, pepper, italian herbs and parsley.
