Slow Cooker Chicken Curry

Mix together coconut milk with spices, onion and celery. Add chicken and vegetables to slow cooker and pour curry sauce on top.

Cook on low for 4 – 5 hours.

Ingredients
  • 1 lb. chicken breasts, cubed
  • 1 lb. chicken thighs, cubed
  • 3 stalks celery, diced
  • 1 onion, diced
  • 1 can coconut milk
  • 3 - 4 tbsp. curry powder
  • cayenne powder to taste
  • 2 tsp. fresh grated ginger.
  • salt and pepper to taste
  • (options) add squash, sweet potato and/or carrots to make an easy, all-in-one meal
