Stuffed Bell Peppers

Cut tops of bell peppers off and remove seeds and membrane out. Cut bottom of bell peppers to make level, being careful not to cut though bowl area. Take left over pepper pieces and dice. Place pepper bowls in microwave and cook till soft. Approx 3-4 minutes. Chop onion and saute in skillet on medium with diced peppers, diced mushroom and coconut oil. Add ground pork or beef, and brown. Season with salt and pepper add chopped tomatoes and curry paste. Add grated cauliflower and simmer down. Should thicken up as the mixture simmers. Add mixture to pepper bowls and enjoy.


  • 1 lb Ground Pork or beef
  • 1 half head cauliflower
  • 2 T curry paste
  • 1/2 t sea salt
  • 6 grinds black pepper
  • 3 T coconut oil
  • 5 baby portobello mushrooms
  • 1/2 small onion
  • 4 bell peppers
  • 1 can chopped tomatoes w/juice, sugar free
