Insert boning knife into thick side of breast. Place hand over breast to feel the path of the blade. Do not cut all the way through.
Boil broccoli or steam until tender. Mix in garlic and cream cheese to taste. Add cheddar and combine until smooth.
Now pipe the broccoli mixture into the pocket you created in the chicken breast.
Bread the chicken with crushed pork rinds.
Brown on stove top and then bake at 375 until internal temp reaches 160 degrees. Remove and let sit for 10 minutes. Cooking continues for a few minutes.
Served in photo with kale salad (baby kale dressed in like juice, olive oil, garlic, salt and pepper with parmesan cheese. )
