Sweet Potato Bisque

Bake the sweet potatoes for 1 hour in a 350F oven. Brown the onion in olive oil in a large saucepan over medium high heat; then add the garlic and cook a minute. Add the tomato juice, broth, chile, ginger and allspice and simmer on medium low for 10 minutes. When cool, peel and chop the potatoes, add one to the pot and process the other with the nut butter. Mix the puree into the pot, stir well and add pepper before serving.


  • 2 large sweet potatoes
  • 1 yellow onion, chopped
  • 1 clove garlic, minced
  • 3c. tomato juice
  • 1/2c. nut butter (I suggest sunbutter)
  • 4oz. green chile, chopped
  • 2tsp. minced ginger
  • 1tsp. allspice
  • 15oz. broth of choice
  • black pepper to taste
