I use this recipe about 3 times a week as a yummy side dish.
Preheat Oven to 425 degrees.
Slice sweet potatoes into rounds about 2 mm thick (thinner for crispier, thicker for softer) and place in medium sized bowl.
Drizzle a good amount of olive oil over potatoes, about 2-3 Tablespoons (I never measure, sorry).
Sprinkle Sea Salt* over potatoes and mix well until each slice is pretty well covered in both oil and seasoning.
Spread/lay sweet potatoe slices in a single layer on a cookie sheet.
Bake at 425 for approximately 20-25 minutes.
*Note: Experiment with seasonings that will compliment the main dish. I have used a combination of Thyme and Crushed Red Peppers; Cajun Seasonings; Italian seasonings, etc. and they are always wonderful.
- 2 Sweet Potatoes
- Olive Oil (to drizzle)
- 1-2 teaspoons Sea Salt (or other seasoning)
