Thai Cashew Chicken

I am pretty new to Paleo…almost one year, so I’ve had my fair share of fast food! One of my favorite fast food meals before going Paleo was Thai Cashew Chicken from Panda Express. I’m sure it was loaded with sodium and of course I would order it with fried rice. Not so Paleo. So I decided to paleofy it! I’m so, so glad I did! It has become a staple dinner in our house.


  • 2 bell peppers chopped (any color)
  • 1/2 onion chopped
  • 1/2 head of cauliflower
  • 2 cups of cooked chicken chopped
  • 1/4 cup chopped cilantro
  • 1/4 cup cashews
  • 2 T olive oil
  • For the sauce: 2 Tbs Cashew butter or sub Sunflower butter, 1 Tbs Coconut aminos, 1 Tbs Olive oil, 2 Tbs water, 1 clove Garlic chopped, 1 tsp Raw honey


Step 1

In a large skillet add 1 T of olive oil and the onions and bell peppers. Cook on medium for 5-7 minutes or until they start to brown and caramelize. Once that starts to brown (5-7 min.) add the garlic and cooked chicken and cook for one more minute.

Step 2

While that is cooking use a food processor to pulverize the cauliflower until it is rice like in texture.

Step 3

Heat 1 T olive oil on medium in another skillet and add the cauliflower. Cook 4-5 minutes.

Step 4

While that is cooking in a separate bowl add all the ingredients for the sauce and mix well.

Step 5

Add the onions, bell pepper, chicken mixture to the cauliflower along with the sauce and cook for 3-4 minutes.

Step 6

Spoon onto a plate and top with cilantro and cashews.
