Dice the three strips of bacon and brown in a pan. Keep the bacon fat in the pan! Add onions and saute another 3-4 minutes. Meanwhile, place arugula on a plate. Once bacon and onions are done, take off stove and add walnut oil to pan as to quickly heat it. Quickly pour this over the arugula. Add coconut vinegar. Add blueberries and pecans. Mix well. Top with black pepper. Ladies, I dare you to eat this without wanting to marry me.

  • 3 slices bacon, 1/4 cup onions, 8 ounces arugula, 1/4 cup blueberries, 1/4 cup pecans, 2 tbsp. walnut oil, 2 tbsp. coconut vinegar

    I made this salad for a pot luck yesterday for a group of real natural people. It was the first dish to run out with many not getting any. What a HIT! Just loved it. And the simple oil and vinegar mix made it WOW!
