Peel onions and halve them and 2 garlic gloves and peel them. Throw into Thermo with 3 tbsp olive oil.
Chop at speed 4 for 6 seconds. Scrape down the sides.
Put the timer on for 10 mins, speed 1, 100 degrees.
When finished scrape down sides, add in roughly chopped zucchini, chop for 10s on speed 4. Add 3 tbsp veggie stock.
Add 1/2 cup water. Time 15mins speed 1 on Varoma.
Then, blend on speed 9 for about 20s and see how thick it is. If very thick add a little of boiling water and blend again until it reaches the desired consistency. Serve with a little coconut cream if desired. Enjoy – x.
