Roast Chicken Thighs
Cooking Steps
Heat oven to 200 degrees celsius (400F).
Smash or grate garlic so it is a paste and grate ginger.Chop red onion into thin strips.
In a dish place chicken, garlic, ginger, red onion, salt and pepper. Then drizzle over some olive oil.
Use hands to make sure the chicken is coated with everything.
Place in oven and cook. Approx 20 minutes.
I served this with some left over roast beetroot, some steamed silver beet and my roast sweet carrot sticks

I know this is so “unpaleo”, but do you have the calorie count of your recipes?! I love so many of them, but use fitnesspal to keep my calories under control since I would eat 24/7. Just a thought. . .thanks!
Meredith, I’m afraid there is no calorie count. We receive the recipe “as is”, but I’m sure it would be pretty easy to figure out a ballpark number for most of them.
Your roast chicken recipe looks amazing. It’s so easy to get in the habit of making the same ol’ baked chicken with salt and pepper. Outside of the amazing healthy benefits, the one thing I love about the paleo diet is that it encourages you to try new things. I am gonna give our recipe a shot this week.

there is no way the chicken cooks within 20 mins. Im cooking it now and they are no where near done
Have to agree with Chad…the cook time was much longer – about 40 minutes. But it tastes AWESOME!
