Roasted Asparagus

Ingredients

asparagus, 1 bundle

bacon, 3-4 pieces

animal fat or olive oil, 2 T

sea salt for seasoning

pepper for seasoning

garlic powder for seasoning

Process

Preheat the oven to 350 degrees.

Drizzle animal fat into a pan. Once again, I used bacon fat.

Ignore those green pieces. I was just throwing the asparagus in there after cutting off the ends, so some ended up staying in there.

Cut the bacon pieces in half.

Wrap a piece of bacon around 3-4 asparagus spears.

Lay them in the pan, then sprinkle them with salt, pepper, and garlic powder. I use onion powder on these sometimes, too. Drizzle the tops with olive oil or animal fat.

Place them in the oven at 350 degrees for 30-35 minutes.

Had planned this to go with the Roasted Pork Loin with herbes de Provence. The weather got nice, so we grilled the pork, and tried with the bundled asparagus, too. Of course the bacon and the grill started an argument, so we had to separate the asparagus and grill them without the bacon. I’m definitely going to try this again in the oven, though.

  4. Making these tongiht, with some bacon wrapped greenbeans made the same way. =)
