Roasted Strawberry Vinaigrette

Cooking Steps

1. Place the strawberries on a parchment lined cookie sheet that has sides
2. Roast at 400 for 20 minutes
3. Pour the berries and the syrup into a blender along with the remaining ingredients and blend until smooth

Ingredients

  • 1 cup organic strawberries, sliced
  • 1/2 cup olive oil
  • 1/4 cup basalmic vinegar
  • 1/4 cup water
  • 1 heaping tbsp fresh basil
  • 1 garlic clove
  • 1/4 - 1/2 tsp sea salt

  2. This looks delish!!! Who has inspiration on what to serve it with?
    I made a lamb an strawberry salad, so I imagine this going really nicely with lamb. Anyone else have any suggestions?

    When you say syrup, do you mean the juice that comes out of the berries from roasting them or actual syrup?

  4. I tried this today and it was great on my salad. I am having lamb chops tonight so may try to use it as well
