Cooking Steps

In a large skillet set on high add coconut oil or ghee, bacon and pine nuts. Cook until bacon is crispy. In a separate bowl, using a pair of kitchen scissors, cut Kale into no more than 1″ strips. It will appear to be to much, don’t worry it cooks down.
Once bacon is Crispy, add Scallops, just searing on each side. Add Kale and place an airtight lid on top and turn off heat. Let it stand, for 15 minutes and voila fast dinner.

*If Scallops are unavailable, use raw shrimp or bass!

Kale recipe can be used as just about any side dish!

  • 6 LARGE Diver Scallops*
  • 1 large head fresh Kale
  • 1 slice cured bacon THICK
  • 1tbs Pine Nuts
  • 1tbs coconut oil or ghee

  1. Leaving the scallops in for the 15 mins the kale needs to wilt leaves them a bit over cooked. I’ll sear them and set aside next time. It’s a delicious and easy recipe!
