Souvlaki with Tzatziki
Cooking Steps
Souvlaki :
1. Mix together olive oil, garlic, pepper, oregano, lemon juice and salt
2. In a large bowl/container, coat the pork tenderloin pieces with the seasoned oil – add more oil if needed to get a nice generous cover on each piece
3. Sweker
4. Grill on medium heat until the meat is cooked through and lightly charred around the edges, approx. 10 minutes, flipping the skewers halfway through (the cooking time largely depends on the size of your cubes – these are roughly 2 bites but you can cut them to your liking)
5. Squeeze lemon over the grilled skewers & serve
Tzatziki:
Optional ingredient: 1 tbsp finely chopped dill
1. Strain your yogurt if needed
2. Salt your cucumber generously and let sit for 10 minutes to draw out the liquic
3. Meanwhile mix the strained yogurt, minced garlic, olive oil, vinegar, salt, pepper (and dill if you are using) in a bowl
4. Squeeze out and discard the liquid from the cucumber and add to yogurt
5. Mix and refrigerate until ready to use
** If you cannot find Greek Yogurt, you can straining regular plain full fat yogurt using two coffee filters in a bowl or glass measuring cups to catch the liquid (that you discard). A few hours will work but if you have time, overnight is best. I remember my mum straining even Greek yogurt, for a very thick sauce.

I thought cream ( milk products) were not paleo. I found it in a lot of recipes. Macaroons and soulvaki and other. Can u explain?
This site has some great recipes but I am disappointed because I have found many recipes that are not paleo.

How much oil in the marinade and how much in the sauce? Same question for garlic and salt and pepper. I went to make the sauce first and mixed the oil, garlic, etc but clearly I wasn’t supposed to use it all. Help!
